Wednesday Waffles




Sorry for not posting this sooner. I tried something in the kitchen that I fed to my dog (it was that bad!)

I am updating with a new post so that you're sure to see this, but am also going to amend the breakfast post as well.

Here is my version of luckiangel's version of oopsie waffles (I omitted Splenda since protein powders contain artificial sweeteners and don't add cinnamon):

**Thanks to the very gorgeous clf2006 for her catch: the fruit in the picture is not induction friendly! The whipped cream is allowed in a limited quantity if you buy the heavy cream and whip it yourself with a bit of Splenda.


Gluten-Free Waffles


6 eggs, separated
6 ounces of cream cheese
1/8 tsp cream of tartar
1 scoop vanilla protein powder


Preheat waffle iron. Spray with non-stick coating (or oil the plates with a pastry brush prior to heating).

In one bowl, beat egg whites with cream of tartar until stiff peaks form. In a separate bowl, mix yolks with cream cheese and protein powder. Add whites mixture to the yolks. With a long wooden spoon or iced tea spoon, carefully make a sine wave through the mixtures to blend them carefully.

Once the waffle iron is sufficiently heated, pour scant quarter-cup measuring cups with batter. Allow waffles to cook sufficiently! You want 4-6 minutes for the first waffles, minimally, since they seem to need more time. DO NOT OPEN the waffle iron until the first waffles have had a chance to cook. It seems that after the first waffles, all others require closer to 4 minutes per.

Serve immediately, or you can freeze and toast later (on a low setting).

Makes 12-14 belgian/rectangular waffles.



Nutritional information per 2 waffles (1/6 of recipe):

Calories: 192
Carbohydrates (no fiber): 1.8 grams
Protein: 6 grams
Fat: 7.5 grams

This sounds great I will definately be trying these in the morning if not sooner. LOL I have a quick question about the previous post. Do you each berries and fruits and things like that? I wasn't sure I should be eating those and wanted to get you opinion. I am trying to stay on induction and am not 100% sure of the things I am allowed to have other than like meat and cheese and your recipes. :) Thanks ahead of time.

You made a great point!

No, fruits are not allowed on induction-- but the whipped cream is (in a very limited quantity).

You are allowed meats (organ meats limited on induction), and you are allowed up to 4 ounces of cheese per day on induction.

Another quick question. Are you still on induction? If not, how long did you stay on it? Do you exercise? How ofter and how long? Sorry that was more than one but you are so inspiring. Thanks again

What if you don't have protein powder? Can you skip it?

Where do you get the lowcarb protein powder in the 1st place?? I looked @ Walmart and the one they had had like 27 grams of carbs per 1/4 cup or something like that.

Thank you, Jane! I can personally attest that grains cause my legs to crawl all. night. long. due to inflammation!

It's a nightmare.


Paula-- I used Jay Robb's protein powder and it was 2 carbs for a full scoop. It's more spendy, but it sure bulks up the waffles and gets rid of the cream cheese/egg flavor!

I'll keep my eyes peeled for a cheaper protein powder!

Is the Jay Robb Protein Powder the whey or the egg white Protein powder? Also do you use this stuff in other recipes? You're right it is kind of pricey but if it's incorporated into any of your other recipes then it's worth the price!

Honestly?

I only use it for this recipe at this time! I am sure that it can be used for oopsie pancakes or other low-carb recipes, but I have to be honest: I bought this stuff like a YEAR ago and wanted to use it up. LOL!

I am looking for a cheaper whey powder that still has the low-carb and the flavor.

I can't believe a big container like that costing THAT much only has 10 servings in it!

I have a question... I threw away my WPP scoop a long time ago since I usually weigh my whey, heh heh. According to your WPP container, how many grams does a scoop of your WPP weigh?

Sounds like a wonderful recipe... I'm going to try it out this weekend. Thanks for posting it!

Forgot to add: For those looking for a lower-cost WPP, Walmart carries Body Fortress WPP (chocolate or vanilla), 2lbs for $13 or so. One scoop (30g) has 1 g of carbs and 23 g protein.

But I no longer buy Body Fortress as it doesn't come unsweetened. After having sworn off all artificial sweeteners (except for a little stevia now and then), most sweetened WPPs are too sweet for me now. Baking is the only way I use WPP and unsweetened is more versatile for savory foods like buns and rolls, plus it's simple to add stevia if I do use it in something sweet.

This is some hilariously true stuff you observe. And your recipes, as well as their documentation, are a real find.

I have one observation and one question: after I let my oopsies cool on a rack, they are perfectly delicious and hard to differentiate from a piece of bread. But then I put them in a zip-lock and they turn into gooey, sticky messes. Their outside "crust" turns into something decidedly un-breadlike and not hand-worthy. Have you experienced this? And if so, how should I avoid this happening in the future?

Your oopsies have completely saved my efforts of eating low carb. I could not possibly succeed for more than a few days without them. Thanks so much. Oh and I noticed you haven't posted in a while and I'm just hoping that life has got you busy and you're ok. Also, allow your self a break every once in a while from being so perfect. You have put a lot of pressure on yourself with all your weight loss success and fabulous recipes but we all know, no one is perfect and if you dont goof up somewhere along the way you will be too good to believe and that would just stink. Let us hear from you soon.

danyelle-- The oopsies should rest on a rack on the counter for about 30 minutes once you debag them and before using. Otherwise they go into total stickymoist mode. Not fun for a sammich!!

samsmom-- Bento is totally cute! It is Japanese lunch boxes, usually stacked, and foods are usually the sweetest little things ever! I watch a lot of anime and the food is too too tooo adorable! I love making these little meals for my kids!

I've been lurking here for a couple months--Oopsie has totally saved my husband and I. I've been working on 'family' meals that everyone will eat and we tried this tonight. We had some splenda sweetened whipping cream and some fresh strawberries, plus syrup for the kids. Worked wonderfully, even though I didn't have vanilla flavored. Thank you for all your hard work on your site--it really does make a difference.
