Lamb Gyro and Tzatziki

Top picture: Low glycemic load gyro dinner using Mission Low-Carb tortillas. Bottom picture: My revoloopsie rolls make a good pita bread replacement

This recipe is delicious and easy. Traditional recipes call for ground lamb and ground beef mixed, but I do my thang. This recipe is so good that my kids scarfed down the entire thing in one sitting (even the generally picky ones).

Lamb Gyro

1 pound lamb stew meat, sliced/chopped into smaller bites (got mine at King Soopers)
1 tsp onion powder
3 cloves crushed garlic
1 tsp salt
1 tsp marjoram
1 tsp rosemary
1/2 tsp black pepper

In a covered baking dish, mix meat with the ingredients. Let sit for a 2-3 hours in the refrigerator.

In a 325 degree oven, cook covered for 30 minutes, stirring occasionally until meat is brown and cooked. (If you're not used to cooking lamb, pull a piece out at 30 minutes and cut in half to check for doneness).

Serve with Tzatziki sauce, lettuce, tomato and a gyro or low-carb wrap.

Tzatziki Sauce

1, 8 ounce cup of full-fat, plain yogurt
1 medium cucumber, peeled and seeded
1 Tbsp olive oil
1 Tbsp lemon juice
1/2 Tbsp dill
2 cloves garlic, peeled
salt and pepper, to taste

In a blender, mix all ingredients until liquid and blended. Store in the refrigerator for at least an hour before serving. Keep refrigerated.

Can also be used as a salad dressing.

Thanks Cleo
oh does that look good and we could even induction safe the sauce by subbing sour cream for the yogurt in the sauce. yummy healthy good tasting foods.

too bad those following the dangerous VLCD sold on Kimkins.com by Kimmer can't enjoy a healthy full fat meal like this and safely lose their weight.

Thank you, feisty! I wish now I'd made more, but since I was experimenting, I didn't want to overcook something questionable.

I was surprised that everything was absolutely gone within 10 minutes. Even the picky first grader asked for seconds. I had to scoop my jaw off of the floor with a spoon.

micheley-- Thank you!

My husband used to frequent a Pakistani restaurant in Dallas, Texas, and buy their gyros. They always used real lamb. I was disappointed to find so many recipes using the ground lamb and beef, so I adjusted recipes I found in order to accommodate the real lamb. It is so sumptuous, and very, very easy to make.

Thank you so much for the Revoloopsie Rolls - I just made them tonight and they are so good!

I am a huge Gyro fan and I intend to make them with these rolls - much more satisfying than lettuce. Thank you, thank you, thank you!!

I have an alternate Tzatziki recipe if you like to play with it, it is about .4 carbs per Tablespoon.

1/2 c sour cream
1/2 cucumber
1/2 t Lemon Pepper
1/2 t dill
1 t onion finely minced

That looks great, frisco! I like the use of sour cream more than the yogurt.

Thanks so much for your feedback and the tzatziki tweak! I'll be trying that next!

TAZATZIKI SAUCE TIP, Use Greek Yogurt for your tzatziki sauce. Or try this: Take a piece of cheescloth and lay in a strainer, add a container of plain yogurt twist the cheesecloth at the top and place in the fridge overnight. The yogurt will be the perfect consistency for your sauce. Also, when you chop or grate the cucumber make sure you squeeze out alot of the juice. Good Luck, greekgirl57

Thank you so much for that great advice!

I found the lamb gyros to be far tastier if you leave out the tzatziki sauce entirely. The sauce on the pita makes it soggy and takes away the flavor of the lamb and the crunch of the lettuce. Try one without the sauce and I'd bet you would agree with me. The gyros don't need sauce.
