Chix' Boneless Buffy Wings





Are you interested in knowing what I had for dinner tonight, true low-carb believers?

I had boneless buffalo wings. In fact, my entire family devoured the chicken wings.

These savory skinless, boneless chicken wings, are not only simple; they're savory and incredibly easy to make-- which is good. If you have teens and fans of chicken wings in the house, you're going to need to make a lot of these!

A good friend of mine, named Kimberly (A fellow Buffy the Vampire Fan) gave me her recipe. It is so delicious, I named the recipe after her. Very similar to the coating for the mozzarella sticks, she shares her technique for making the best chicken wings you've ever had! And it's totally Atkins friendly!

I told Kimberly two things: 1. I hate pork rinds; and 2. David Boreanaz (Angel) is much better-looking than Spike (James Marsters).

She told me to quit being a big baby and try the recipe already. (And then she told me that Spike beats Boreanaz with an ugly stick).

Even if her taste in Whedon's undead is less than tasteful, there's nothing more tasty than these wings! If you don't believe me, try them for yourself!

Chix' Boneless Buffy Wings

canola oil
chicken breast, cut into smaller pieces
pork rinds
Mrs Dash (garlic and herb)
egg
sauces (listed below)
ranch dressing (optional)

Heat a skillet with canola oil. While the skillet is preheating:

mix an egg in a bowl. Set aside.

In a ziplock bag, crush pork rinds to very fine texture using a rolling pin. Add Mrs Dash to the bag, and mix well.

On a cutting board, slice breasts in half, the long way, and then cut across to make 8-10 bite-sized pieces (your number of pieces will vary according to the size of the breast).

Dip the bits of breast in the egg bath and then plop into the bag of rind/spice mix. Coat by shaking the bag.

Once the pan and oil are heated, add the coated pieces to the oil. Cook on both sides, until the chicken is lightly-to-medium brown (5-9 minutes, depending on the oil temperature and size of the chicken pieces).

Remove chicken pieces to a plate lined with a paper towel to absorb excess oil.

Place drained chicken tenders on a plate and coat with sauces of your choice.

** addition from my friend Chix: "One suggestion... the way I make mine "buffalo wing style" is to melt some butter and mix it with Frank's Red Hot sauce. (I don't know the carb count, but it's lower than BBQ sauce.) I put it in a Gladware container with a lid, throw in the chicken and then shake them all around to coat them. That's the way they do it at Buffalo Wild Wings, so I thought I'd give it a try."

For plain Buffy: While we know there's nothing ever plain about Buffy, these served up without any sauce come in very well within induction levels, at approximately 0 carbs. I mean, chicken, pork rinds, oil and a little seasoning? Bwah! Take that, induction! I can eat these and be absolutely safe!

For zesty Buffy: I used Bulls-Eye original Barbecue Sauce. This is NOT low-carb, coming in at 13 carbs per 2 Tbsp. If you can find something "cheaper" in carbs that has the same delicious twang, do it! (If you have a low-carb recommendation, please let me know).

For spicy Buffy: I used Texas Pete Buffalo Style Chicken Wing Barbecue Sauce. It'll rip your lips right off of your face, but it's darned good stuff. And at only 3 carbs per 2 Tbsp, it's a might bit "cheaper" than the Bulls-Eye.

As I said earlier, my family ate these faster than I could cook them and slather them with delicious sauces. And the taste? Well, how about a little bit of Heaven? These taste just like standard chicken wings from Pizza Hut and other restaurants, but because you made them at home, you know exactly what you're getting!

With celery and ranch for extra dipping, this is the perfect buffet dish to take. No one will ever know they're low-carb!

Oh my Gosh! That is so funny!

I have to tell you about my husband's Ding Dong. I'll do that soon. (No worries! This is still a PG-site!)

I so think you should give this a shot. To me, these are every bit as comparable as any other boneless wings I've had.

My friend Kimberly is amazing, and has been trying to convince me to try these. I'm so glad I did, I'm asking everyone to try these!

Wingstop has nothing on this, and this is totally safe for low-carb, diabetic folks, or folks with gluten-intolerance.

I have more recipes I'll be posting soon. I really love cooking! Thanks so much for being patient with me while I try this stuff.

Yippee. These sound great! I found KC Masterpiece Low Calorie Classic Blend to be awesome for BBQ. I have to get it online because I live in a small town. It's spicey and good and comes in at about 4 carbs per serving. I dilute it a little with honey substitute so it could be a little lower carb.

Those look incredibly unhealthy. You may lose weight eating stuff like that but you'll never be healthy.

Your heart will pay for it later.

I guess you didn't eat any vegetables with dinner either. Awful.

Nature's Hollow Sugar Free Tastes Like Honey. Sweetened with Xylitol. I found this and the KC Masterpiece originally at Low-Carb.com but if you shop around I know it can be found cheaper. I forgot, I also dilute the KC with Petes hot sauce so that makes the carbs even lower. I'm eat'n Buffy wings this weekend for sure!

I am eating very healthfully-- 5-7 servings of vegetables per day on induction. That's more than the average American eats in a day... some in a week!

Fried foods are not something one eats every day of the week. They are terribly rich, and I find them rather self-limiting.

Veggie-wise, I eat celery with mine, because celery is a wonderful complement to the chicken!

As for my heart, my doctor is tickled pink with my progress! And I might add that I haven't had ringing in my ears (high blood pressure) or an anxiety attack since beginning Atkins again.

It really is an amazingly healthy lifestyle if one follows the plan as Dr Atkins intended!

I am not sure the background of the person who commented. Assuming they are not someone who is in tune with Atkins or low-carb dieting, I think the myths are showing themselves again in the heart disease, kidneys falling out, exploding spleens, etc.

If the person is a low-carber who really thinke that I'm eating nothing but fried foods, then perhaps that is my fault for not being sure to mention that I'm eating plenty of fresh, green vegetables everyday! Of course, posting recipes, you usually don't have to mention sides with main courses.

I'm positive the commenter meant well and was assuming from one post than an entire diet could be forged from pork rinds, but with continued reading into the blog will see that there is a very healthy lifestyle to be had in low-carbing.

This is why people like you and me exist: to help others see that low-carb is a very healthy and sustainable lifestyle.

(I don't know the carb count, but it's lower than BBQ sauce.) I put it in a Gladware container with a lid, throw in the chicken and then shake them all around to coat them. That's the way they do it at Buffalo Wild Wings, so I thought I'd give it a try.

I've also mixed my boneless wings in a salad with ranch dressing, and even put them on a low carb flatbread w/ ranch dressing as the "sauce" and some mozzerella cheese and baked it to make a pizza.

These boneless wings have always been a lifesaver for me when I'm low carbing.

These look wonderful, too, and I WILL be trying them! One thing I thought I'd suggest to you all for buffalo wings is Emeril's "wing sauce"... definitely zesty and ZERO carbs. Wonderful with blue cheese dressing. I've bought it by the case online, but my local Safeways (Los Gatos, Palo Alto, etc., in northern CA) seem to carry it regularly.

And if I may weigh in on the Spike v Angel debate, Cleo and Kimberly, you've both wandered blindly off-base, I'm afraid. Sure, both boys are easy on the eye and deft in the comic delivery department... but for the COMPLETE package, a discerning girl need look no further than Wesley.

That's right, I said it. Of course, I refer here specifically to dark, brooding, damaged Wesley from late in ANGEL, not to "stake-up-his-English-channel" Wesley from early BUFFY.

I do have standards, after all.

Why don't you just make regular buffalo wings without the pork rinds as regular BW don't have any coating.

Also you can get a zero carb hot sauce and mix it with a little butter.

As for the healthfulness of Atkins, didn't the good doctor die obese with a heart problem?

And celery isn't a suitable vegetable course for a meal BTW.

The coating makes them more palatable and adds fat, something which helps not only please the pleasure sensors of the brain, but which also satisfies hunger. Chicken, in itself, doesn't contain enough fat to sustain hunger for a long period of time. Remember, fat is harder to break down into energy than protein, and you want your body to work harder to break down those fats.

Thanks for the 0-carb tip! MyHeroZero gave me an amendment regarding mixing hot sauce with butter, and you both are right-- it turned out terrifically!

Atkins didn't die of heart disease. He slipped on ice, busted his head open and died in a coma.

Celery isn't a healthful vegetable? Really? That's intersting.

As an aside, did you read earlier where I stated that Atkineers on induction eat 6 servings of vegetables per day?

On an average day I eat spinach, tomatoes, avocado, red onion, jalapenos, romaine lettuce, green beans, cabbage, you name it.

So, for one meal, I suggest celery as an accoutrement and you think that's unhealthy on a plan which requires 6 servings of vegetables per day?

My friend, we're going to have to agree to disagree on your point.

It was April when he slipped. Not too much ice around then.

I read he had a heart attack, fell, and died obese at over 250 pounds.

In any case, whether he died of a heart attack or not, it is a known fact that he had heart disease and died obese at over 250 pounds.

As most of the medical community has cautioned his diet can cause heart disease and he in fact developed heart disease himself, I would be wary of following his advice to an early grave.

His family went to some trouble to hide the medical reports of his death because it would likely damage their diet empire. If the doctor was in good health from his wonderful diet, I think the would be very open about his medical history.

Anyway, good luck.

BTW it's Franks red hot wing sauce that has zero carbs. I checked it yesterday in the supermarket.

I always make my wings in the oven at 450 with some garlic powder, onion powder, and pepper on them using real chicken wings cooking them on a broiler pan to drip off some of the fat and then coating them in the Hot Wing Sauce after they are done.

Real wings have a lot of fat already so maybe you could try that if you want. :)

Hey, friend! There is still ice in April in quite a few parts of the country. I've lived in a few of them!

When one goes into a coma, it's not uncommon for the body to gain immense amounts of water weight. It's scientifically known that this does happen, due to circuclation changes and inability for the kidneys to properly function.

A doctor will tell you this (I'm related to several).

Thank you so much for the Frank's Hot Sauce tip,and for the baking tips! I'm always afraid the chicken will dry out.

As I move away from weight loss and towards maintenance, I'd love some more thoughts about baking meat to keep it supple and moist. I have had tremendous luck with my gyro and tzatziki.

Make sure you're getting your vegetables in! If you're eating as many as I am every day you're well surpassing what most people I know in my weight loss group are not even close to in terms of eating... and these folks are low-cal dieters!

Can you believe how poor so many folks eat?

Thank-you sooooooooooo much for your wonderful recipes! I don't know how you come up with them! My husband & I have been doing Atkins since January- he for the first time, and it's been tough for him. He grew up with starchy, high carb foods and misses them dearly. We tried your oopsie rolls last week, and he almost cried- it's like that commercial where the couple is on a 'Dr. Phil' like show because the wife won't let the hubby eat snacks and then they discover popcorn. We had them with turkey burgers and again last night made into hotdog buns. I can tell I'll be trying many of your recipes in the months to come. PS- he's lost 40 Lbs so far!

Well, props to you for not going crazy on that anonymous Atkins basher...I may have lost it. I have been eating healthy carb, lol, for just over three years now, and I love it. I used to get bad stomach aches and would just feel awful! I have lost 42 pounds, am eating next to zero processed food, and am exercising regularly! I STILL get the third degree from family though! The best part is that I feel great and enjoy my diet and it's amazing results while my low-fat "healthy" family members remain overweight and very much unsuccessful (by that I mean not only did they not lose weight, they have gained some). So I have learned no matter what some people go this way and you just gotta go that way! I don't bash vegans or those that choose to eat low-fat (and most likely high carb). I figure it doesn't affect me so what's the point if everyone is happy? As an end note, I am very glad that I found your site! Great recipe ideas! Thanks a bunch!

nichole-- WOW! You have lost a lot of weight, too. It can be so hard. People mean well, but it doesn't always come out as it should. sometimes concern can sound judgmental, but it's in the delivery and not the sentiment.


I am really so excited to hear all of the success stories of new friends who have been doing so well on low-carb! It makes my day!

I am coming into this a little late, but I remember there WAS ice everywhere when Atkins slipped and died. I was very upset about it because I had just started the diet and was doing well, but was sad to hear about his misfortune.

I was also working at a deli at the time (great for low-carb lunches...) I would have to walk there from school which took about half an hour on a good day. so YES I remember there was a huge storm around April 2, everything was coated in snow and ice, you couldn't walk on the sidewalks because of the ice build-up. so I walked to work on the road and cars had to drive around me.

I made some simular, but mine were more like chicken fingers (larger strips of chicken)but I used the hot and spicy pork rinds. Hubby has been going on about the spicy bonless wings at KFC, We both loved them dipped in Ranch. He isn't even low carbing.
